Low-Carb Keto Fudgesicles Perfect for Sunny Days

Let’s face it; if you’re on a keto or low-carb diet, it’s the warm, sunny days that really get you. You can’t stop thinking about sweets, ice cream, and whatnot. Cold sweet treats are also terribly under-represented on specialized cookbooks and websites, but that ends today because these low-carb keto fudgesicles are so good you’ll want to make them every weekend.

Chocolate is on our side, and with an array of low-carb sweeteners at hand, there’s nothing to stop us from enjoying a sweet treat anytime we want!

What ingredients do you need for keto fudgesicles?

There are a few things to consider before we get started with keto fudgesicles.

For this recipe, we’re using a few unique ingredients, particularly xanthan gum.

If you don’t know what xanthan gum is, it is a type of sugar made using a special bacteria (a good bacteria) in a natural fermentation-like process. Xanthan gum thickens liquids and acts as an emulsifier, so it keeps ingredients together.

Perfectly safe to add to your diet, xanthan gum gives unctuous richness and a smooth mouthfeel to food, which is why we use it to give body to our nice chocolate fudgesicles.

We’re also using chocolate in two forms; cacao powder and chocolate syrup (or molten chocolate). Make sure both are unsweetened, and if the chocolate is at least 70% cacao, it will not only be tasty but great for you for its extraordinary amounts of antioxidants.

If there’s anything else to add, it would be the endless possibilities of giving your fudgesicles some crunchy texture and added protein — by using nuts.

We’re recommending walnuts, pecans, Brazil nuts, macadamia nuts, or hazelnuts; they’re all nutrient-rich and delicious!

We love to decorate these keto fudgesicles with melted chocolate and nuts, but be creative, from keto cream cheese frosting to sugar-free caramel sauce, there are no limitations.

What if you don’t have a popsicle mold?

Reusable molds might be the most convenient way to get your keto fudgesicle fix, but there are plenty of easy ways to make popsicles without them. There are a few different ways to get crafty and make your own popsicle molds using tools you probably already have at home.

Paper or plastic cups

Small disposable plastic or paper cups are ideal to use if you don’t have a reusable mold. Use cups of different sizes and make at least one giant popsicle.

Ice cube trays

Ideal if you want to make smaller fudgesicles.

Small baking tins

You can use any kind of small mold you already have in your kitchen. Think of those mini muffins tins or mini brioche tins. They will all work great.

Loaf Pans

Using a loaf pan as a popsicle mold is ideal if you want to make layered popsicles. You can make two or three different mixtures and then pour them in layers to your loaf mold. Once they are fully frozen, slice into individual servings. Just be sure to line the pan with plastic wrap or parchment paper first.

How long does it take to freeze keto fudgesicles?

The time these keto fudgesicles have to stay in the freezer depends on the type of mold you are using and your fridge. If you are using molds with built-in sticks, 5-6 hours in the freezer is the best.

If you are using a mold without built-in sticks, freeze the fudgesicles for 2 hours or until they are partially frozen and then slide the sticks in the center of the popsicles. The sticks should stand on their own. If not, freeze for another 30 minutes.

Keto Fudgesicles My Sweet Keto

There’s nothing to stop us from enjoying these keto fudgesicles on sunny days.

Place the following ingredients into a blender: a cup of double cream, a cup of coconut milk, a quarter cup of cocoa powder, the sweetener, vanilla essence and xanthan gum. Put the blender at maximum speed for about 3 minutes. Turn off and taste the mixture. Add more sweetener if desired.

Add half of the nuts and a few drops of chocolate to the mix and turn on the blender for 5 seconds max.

Pour the mixture into the silicone molds and refrigerate for one to two hours. Remove from the freezer and insert wooden sticks. If you are using a mold with plastic sticks, you can skip this step.

Leave in the freezer for at least 6 hours. This depends on your fridge and the temperature.

Melt the chocolate in a double boiler, decorate the popsicles with melted chocolate and the remaining pieces of nuts. Enjoy with your friends and family.
